Well, it was a matter of time.
Something happens when your kid turns two. Between the running, talking, and playing with monster trucks, I just don’t have the same kind of time I used to have. I know, I know…I used to roll my eyes when I’d hear parents talk about this kind of stuff, so stick with me if you are rolling your eyes right this minute. To make my life easier, I’ve decided to turn to the slow cooker. See? Who am I?

Look, it’s not like I’m new to the slow cooker idea. Here I am a few years ago talking about slow cookers on MyRecipes.com: Slow Cooker Surprises.
Ah…little did I know a few years later I’d have such a cute kid forcing me down the slow cooker route.

Last week, I tried something new: Slow Cooker Lemon Garlic Chicken. I’m going to send you right over to where I got this recipe at The Kitchn.com because well, I didn’t stray from the recipe one bit. Plus, my photos didn’t turn out quite as good as theirs.
But, while I have you…I can at least show you some “before” shots:



This whole chicken not only gave me the recipe and gravy listed in the recipe link above, but I also shredded some of it and made some chicken salad. Not in the mood for chicken salad? I’m sure it would have been great on top of a regular ‘ol salad too!
Slow cookers are not just for pot roasts and potatoes. This recipe inspired me to get out of my slow cooker rut and find recipes that allow me to use one ingredient a number of ways. One helpful tip: The chicken falls right off the bone, so be sure to watch those bones carefully. I speak from experience on that one…
