Um, I kind of threw the weekly Weight Watcher points out of the window this weekend. There was the normal El Cazador on Friday night (aka cheese dip and vegetarian fajitas). Then I went to a friend’s house for a part-ay on Saturday night and there were things like baked beans, more cheese dip, grilled everything, and cakes. I was a bit better today, but I was reminded very quickly how the calories add up once you let loose. The good thing is I’m more mindful of those weekly points and save them up for moments like this.

Tonight, we had another super delicious WW meal courtesy of…yes, Skinnytaste.com: Ground Beef and Black Bean Enchiladas. Gina (aka Skinnytaste) used ground turkey, but I used lean ground beef instead because I’m kind of ground turkey-ed out to be honest. This dish was by far one of the best Skinnytaste dishes I’ve had. You can see that one side of the dish has more cheese. My husband appreciated that part!

A couple of caveats:
1) That enchilada sauce is h-o-t. I ended up only using a little on the actual dish. It was really good in small quantities (but mind you, I’m extremely sensitive to spicy stuff).

2) My enchilada didn’t look as pretty as hers did. So, apologies in advance for the next photo:

I had one enchilada with a side salad. My salad included cilantro, scallions, yellow sweet peppers, and a lime vinaigrette. I’m not sure if using ground beef instead of turkey changes the point values at all, so I will just assume it does and call this an 8-pointer. Of course, I added some reduced fat shredded cheese as you can see…be mindful of that as you count your points. The salad had a very small amount of dressing, so I’m going to say that it was 2 pts. All in all? 10-point meal tonight. Yeah, that sounds good. I’m going with it.  🙂
