Listen, sometimes you want a meatball. Actually, you want a meatball sub. Then you remember that every meatball equals some kind of point in the Weight Watcher world. Well, that’s where food blog inspiration comes in. I found my meatball inspiration on www.laaloosh.com when I found her Light Italian Meatballs recipe.  It was super easy to make and I got it on the table in less than 45 minutes start to finish. I pretty much followed the recipe as is, but I substituted one egg for the egg substitute (I don’t do egg substitute because I just don’t even understand what that means). I also didn’t use fat-free marinara sauce because I don’t really understand what that means either. To make up for the points I might have gained in those two decisions, I just cut down on the number of meatballs. LaaLoosh said that 5 meatballs were 5 points, so I’m still counting my 3 meatballs as 5 because of my cheats listed above. I put mine in a mini pita (2 pts) and topped it with a tablespoon of reduced fat shredded cheese (1 pt). I paired it with a huge amount of chopped broccoli and ended up with 8 total points. And did I mention that I had some meatballs tonight? Take that, points.
